  • 1 tbsp vegetable oil
  • 2 large onions, chopped
  • 2 large celery sticks, chopped
  • 1 large green pepper, seeded and chopped
  • 3 garlic cloves, crushed
  • 1kg lean minced beef
  • 75g fresh breadcrumbs (white or wholemeal)
  • 1 egg, lightly beaten
  • 227g can chopped tomatoes
  • 4 tbsp tomato ketchup
  • salt and freshly ground black pepper

  1. Preheat the oven to 180°C (gas 4). Heat the oil in a large, deep frying pan, add the onions, celery, green pepper and garlic and cook gently for 5 minutes over a medium heat until soft. Transfer the vegetables to a large bowl.
  2. Add the beef, breadcrumbs and egg to the vegetables, season with salt and pepper and knead the mixture with your hands.
  3. Combine the tomatoes with their juice and the ketchup in a small bowl. Add half to the meatloaf mixture and mix again.
  4. Transfer the mixture to a lightly greased baking dish or roasting tin and shape to make a loaf, measuring about 25 x 18cm, mounding it slightly in the centre. Make a lengthways groove down the centre with the side of your hand and pour the remaining tomato mixture into the groove.
  5. Bake for 1 1/4 hours or until cooked through to the centre. (If you have a meat thermometer, it should read 71°C when the loaf is cooked.) Allow to stand for 10 minutes before slicing, using a sharp knife.

Eh, I'm American and this isn't quite right, however finding the "real" recipe is like finding the holy grail. I usually add apples, brown sugar, beer, carrots and raisins to mine. I like a heartier flavor.-30 Jan 2012

Slap Yo Momma’ Meatloaf

1 Family pack ground beef, 5 pounds or greater
1/2 large onion, chopped
1 bell pepper, large, chopped
4oz of evaporated milk, about 4oz
2 large eggs
1 1/2 packages of crackers
5oz regular A1 + 5oz Heinz Carolina Tangy BBQ Sauce (In lieu of 10oz A-1® Sweet and Tangy Steak sauce, which is no longer sold.)
1 small can tomato sauce, 8oz
1/2 bottle of ketchup, 7oz of ketchup


Glaze:
1/3 cup Dark Karo ® Syrup
1/2 cup Ketchup
1/4 cup Brown Sugar

Instructions:

Place ground beef in large bowl.
Add chopped onion and bell pepper.
Pour in 5oz regular A1, 5oz Heinz Carolina Tangy BBQ Sauce, 7oz of ketchup, 1 small can (8oz) tomato sauce.
Beat 2 eggs in cereal bowl and add about 4oz evaporated milk, stir.
Pour in meatloaf mixture and mix with hands thoroughly.
Add enough crackers to make the mixture stick together.
Recipe makes 2 large loaves, so you may split and freeze half.
Mold meat into a loaf in a roaster or similar deep dish pan.
Bake at 350-375 degrees for about an hour and 15 minutes, or until it appears to be done.
You may also drain some of the juice off of the loaf before you top with glaze, but not too much because it will result in a dry meatloaf.
Mix glaze ingredients in equal parts or to taste and cover meatloaf with it.
Bake uncovered about 10 minutes, to cook the glaze. Slice and serve.

HOW TO MAKE MEATLOAF

  1. Prep – Preheat the oven and have ready a rimmed sheet pan lined with foil for easy removal and easy cleanup. Nonstick foil is preferred.
  2. Make Breadcrumb Mixture – To kick off this Traditional Meatloaf Recipe, you’ll begin by making the breadcrumb mixture. Mix together breadcrumbs, seasoning, milk, egg, and Worcestershire sauce in a large mixing bowl.
  3. Mix in Ground Beef – Add the ground beef and minced onion. Then, use your hands to mix until all of the ingredients are evenly incorporated.
  4. Shape the Loaf – Transfer the mixture to the prepared pan and shape into a narrow loaf. You want to shape the meatloaf to match the size and shape of a loaf pan…only a little more narrow as the meatloaf will spread as it bakes.
  5. Make the Glaze – To make the glaze, combine ketchup, sugar, Worcestershire sauce, and seasoning and whisk to combine.
  6. Bake – Pour half of the glaze over the meatloaf and bake for 35 minutes. Then, remove the meatloaf from the oven and carefully pour the remaining sauce over the top. Return to the oven and bake an additional 15 minutes.
  7. Rest – Allow the meatloaf to rest about 25 minutes before slicing into. Serve and enjoy!

I never leave reviews. But this is the first meatloaf I’ve ever made, and it was a stunning victory. I belong to a meat CSA, so I subbed what I had on hand: one pound each of goat, pork, and lamb (all ground). I used plain bread crumbs with a hearty Italian herb blend from Penzey’s sprinkled in. Y’all. Do yourself a favor and do as another reviewer suggested: add more crushed tomatoes than the recipe calls for and purée all the drippings with a stick blender into a silky gravy for pasta. Perfection. We shall meet again.

This is a very dense meatloaf and makes a large amount. I made the loafs in two pans (essentially cutting recipe in 1/2) put one in the freezer and baked the other. Day 2, I sliced the baked loaf, basted w/ bbq sauce, and heat through using a cast iron skillet. It is delicious. Somehow, it isn't so dense when prepared this way and it has become our preferred way to cook and serve it.

Tried this for the first time last night and it was a hit. I did substitute 1 plus cup Italian bread crumbs instead and in my hurry I forgot to add the garlic, but that was my issue, and everyone still that it was really good. I'm sure the next time I make it with the garlic it can only be better. This is a very large meatloaf so for a small family you might want to think of halving this recipe, otherwise you will be eating left overs for days.

This was good but not fantastic because it needs more seasonings. I used extra oregano and added fennell and extra cheese. It was very moist. It took nearly 2.5 hours to cook in a 375 oven.

This was surprisingly good. I made 1/3 of the recipe and only cooked it 1 hour, it was cooked through but moist (165F). I used fresh basil instead of the parsley and just topped it with a can of pelatis in juice but otherwise followed the recipe and wouldn't change a thing! My 10 month old loved it too.

I tried this dish for the first time when my friend made it. I was surprised because I have never had such a superb meat loaf. Of course, I started making this for my own family, and meat loaf is now bumped up from a boring filler up dish when you have run out of ideas on what to cook to a treat.

Have made this a number of times with a few modifications that make it a big hit. First, I do away with the bread and add 1+ cup of Italian bread crumbs instead. I also don't use parsley or oregano and instead use a lot of fresh basil. I add some chopped prosciutto to give the loaf some saltiness and flavor, and increase the cheese. I put some of the tomato paste, celery, and carrots right in the loaf, and use a larger can of tomatoes to put around the loaf with the veggies (onions and basil added). We serve the meatloaf with pasta, as there is a good amount of sauce to pour over. Delicious. Might also try blending the tomatoes and veggies after it comes out of the oven for a smoother pasta sauce.

I was a little disappointed with this. My meatloaf came out kinda bland, just not a lot of flavor. I had to use dried parsley instead of fresh and spaghetti sauce instead of tomatoes and paste. I even used Italian seasoned breadcrumbs. There was also quite a bit more liquid at the bottom of the pan by the time it was done. Overall, it was okay.

This has become a regular meal at our place. I'm not usually that keen on meatloaf but this is great. I make two loaves and cover them both with a sprinkling of chopped bacon, tenting the baking tray to keep in moisture. Once the loaves are removed, all the remaining ingredients can be blended (I use a hand blender) into a delicious, rich sauce. Roast potatoes and cauliflower- cheese with a dash of Thai chili sauce completes a great meal for all ages.

I used about a cup of bread crumbs instead of bread, parmesan instead of romano, juice in can from tomatoes instead of water, and added baby bellas right to the cooking sauce at the beginning. A classic, American Meatloaf, is one of the all time best comfort foods for Americans. At our house, when this dish is served, we have a discussion about who gets the end piece, because the crispy crust is the favorite among the eaters at our house.

Shopping List
dried onion mushroom soup mix

Equipment

Instructions:
Preheat the oven to 350F. Prepare the vegetables. Peel and finely dice the onion, wash and chop the parsley. And wash, core, deseed and dice the red bell pepper.

With your hands, mix together all of the ingredients in a large mixing bowl. Mix carefully and only enough to combine the ingredients. Over mixing can cause the loaf to dry out.

Lightly oil the sides and bottom of the baking dish. In the center of the dish, form the mixed ingredients into a loaf shape, leaving about an inch between the sides of the loaf and the sides of the baking pan. This will allow for a crispier loaf.

Bake, uncovered, for 35 minutes. Let the loaf cool for 5 minutes before serving.

  • 1 large egg, lightly beaten
  • 1 tablespoon light brown sugar

Preheat oven to 350 degrees. Tear bread into pieces pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.

Pulse vegetables in food processor until finely chopped (or do so by hand). Heat olive oil in a large skillet over medium-high. Add vegetables, thyme, and 1 teaspoon kosher salt to skillet cook, stirring occasionally, until vegetables have softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat let cool completely.

Prep the Meat and Glaze

: In a small bowl, stir together remaining 1/2 cup ketchup and the brown sugar for glaze set aside. In a large bowl, combine vegetable mixture with ground chuck, egg, 1/2 cup breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined.

On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with glaze. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) Let cool at least 25 minutes, then serve with comforting sides, like mashed potatoes. and sauteed broccolini.

Combine egg whites, 1/4 teaspoon salt, and pepper in a large bowl, stirring with a whisk. Add beef, bell pepper, onion, and 1/2 cup tomato sauce to egg mixture. Place bread pieces in a food processor process until fine crumbs form. Add crumbs to beef mixture, mixing with hands just until combined. Shape beef mixture into an 8 x 5&ndashinch loaf. Place on a foil-lined baking sheet coated with cooking spray.

Combine remaining tomato sauce, remaining 1/4 teaspoon salt, sugar, vinegar, and Worcestershire sauce in a small bowl, stirring with a spoon. Reserve 2 tablespoons tomato sauce mixture. Spoon remaining sauce mixture over top of loaf.

Bake at 350° for 45 minutes or until done. Remove from oven, and spoon reserved sauce over meat loaf. Let stand 10 minutes before cutting into 8 slices.

  • Private notes: If you want to note something that should only be visible to you, this is where you add it.

Once you’ve created your meal plan, click “Create meal plan” to save it. If you are logged in to Kidney Kitchen Pro, you can access your custom meal plans at any time. Click on the meal plan to access the content and to share and print it for others.
