Green soybean meatballs (Mung beans)

Like any plant product, soy does not contain cholesterol. 85 percent of the fats in the composition are unsaturated, ie healthy. In addition, it contains soluble fiber, which lowers the absorption of "bad" cholesterol in the body.

Due to the content of isoflavonoids, substances with similar action to estrogens, soy prevents cardiovascular diseases, infections, and even cancer. It alleviates the symptoms characteristic of menopause, so it is especially useful for women over 40 years. It contains less calcium than cow's milk, but it is better absorbed in the bones.

Daily soy isoflavonoid supplements increased skin elasticity and stimulated collagen synthesis in 75 percent of women included in a study conducted at the University of Sao Paolo in Brazil. The study involved 30 menopausal women.

Soy contains 35% of proteins and essential amino acids, which the body cannot produce on its own. It is also rich in Omega 3 and Omega 6 essential fatty acids. All this makes it the best meat substitute. However, in contrast, soy does not contain iron.

Soy isoflavonoids also protect the body against breast and prostate cancer. Soy is a plant rich in protein and low in carbohydrates. The high fiber content reduces the risk of digestive problems.

I offer you a delicious recipe for meatballs made with this type of soy. I admit that it is the first time I buy it and I prepare it, but it will certainly not be the last because it is absolutely delicious.

After I cooked it, I found that I had no recipe. I didn't find many recipes on the net either, so I took the bull by the horns and improvised these meatballs that turned out so good that they even conquered Cris.

Ingredient for approx. 20 meatballs

300 gr green soybeans
2 medium potatoes
1-2 cloves garlic
1-2 tablespoons breadcrumbs
1 slice of bread
1 teaspoon turmeric (optional)

Let the soy soak for 12 hours. The next day we wash it in about 2-3 waters and put it to boil, over low heat, in salted water, until it is completely cooked.

When the soy is almost cooked, add 2 diced potatoes to the pot. After the potatoes have boiled, turn off the heat and strain the vegetables. Let them cool completely,

After they are completely cold, add 1-2 cloves of crushed garlic, 1 slice of bread without peel soaked in water and squeeze very well, salt, pepper, cucumber and if the dough is still soft add 1-2 tablespoons of breadcrumbs.

Knead the dough until it binds, then form the meatballs. We wet our hands before forming each meatball.

Pass the meatballs through a mixture of flour and sesame and fry them in very little oil (preferably peanut or palm oil).

If you want, you can bake them in the oven. Place the meatballs in the oven tray lined with baking paper and greased with a little oil. Bake at 180 degrees, preheated oven, for 15 minutes.

Method of preparation

The soybeans are boiled in salted water, according to the specifications on the package. After boiling, drain in a strainer.

Onions and leeks are cleaned, washed, finely chopped and put in oil, and when softened, add well drained soybeans (we can press well with our hands until all the water drains), finely chopped bell peppers, season and simmer for about 10-15 minutes until well reduced.

Prepare a white sauce from a little vegetable juice (100 ml), 1-2 tablespoons flour, melted butter, salt, and from this sauce 3-4 tablespoons add soy sauce, mix and remove from heat. left on the fire for a long time, because there is a possibility to catch it).

Grease a stove tray with a little oil, spread half of the pie sheets, each greased with oil mixed with melted butter, spread the above cooled composition, then add the rest of the greased sheets.

Portion the pie with a very sharp knife, without penetrating to the bottom, put the pie in the oven until browned, and can be served hot or cold with sweet or spicy ketchup.

To the filling you can add mushrooms, which are put together with the other ingredients, finely chopped.
