Boil the soybeans in salted water. After they have boiled, we strain them and let them drain. We clean the onion and cut it into small pieces. We clean the mushrooms and cut them into cubes. We put the cleaned carrots on the large grater.
Heat the oil and heat the vegetables one by one. We start with onions, add the carrots and finally we add the mushrooms together with the washed and drained rice beforehand. Let it harden until the juice left by the mushrooms evaporates and then add enough water to cover the rice a little. Let it boil until the rice is half cooked. Set aside and add the cooked soybeans. Season with salt, pepper to taste and add 1 teaspoon of paprika, mix to blend all.
The filling being done we take care of the cabbage. We put boiling water in which we put 1 tablespoon of salt. We remove the spine from the cabbage, and when the water boils we scald them. We detach the leaves and place them in a bowl where we let them cool and then with a knife we cut the thicker ribs on the surface of the sheets.
