Dessert birthday cake with berries and vanilla cream


Rock:

All ingredients (for the countertop) must be at room temperature.

I separated the egg whites from the yolks.

In a large bowl I put margarine and started mixing.

I added the yolks and continued mixing.

I added the sugar and mixed well until it no longer feels between the teeth.

Separately I mixed the dry ingredients: flour, baking powder, cocoa and I added them to the composition.

Over the egg whites I added a pinch of salt and beat them until they hardened.

Then I added them to the composition carefully, stirring from the bottom up to keep their volume, until they were incorporated into the composition.

I lined the tray with butter and flour and lightly poured and leveled the composition.

I put the tray in the preheated oven at 180 ° for about 45 minutes or until the toothpick remains clean.

Do not open the oven door for the first 20 minutes. Preferably it would be even after 35 minutes. This way we will know for sure that the countertop keeps its volume.

Leave the top on the grill of the stove / oven until it cools down.

The worktop is cut in half. It can be cut after a few hours or preferably the next day.

I put food foil over the tray in which I made the countertop and I put the first part of the countertop in it. Then I started with berry cream.

Cream of berries:

I put the frozen fruit in a pot. I sprinkled the fruit with a little lemon juice to keep its color. I added the sugar and then I put the pot on low heat. I let it boil for a few minutes until it dropped from the syrup formed.

I hydrated the gelatin foils in cold water, then I squeezed them with water and added them over the fruit mixture, after I took the pot off the heat.

In a large bowl I put whipped cream, powdered sugar, vanilla sugar and whipped cream hardener. I mixed until I got a strong cream.

When the berry syrup cooled, I incorporated the whipped cream with light movements from the bottom up.

I put the cream over the first part of the counter.

I leveled, put the second part of the countertop and put the tray in the fridge until I prepared the vanilla cream with mascarpone.

Vanilla cream with mascarpone:

I put the yolks, sugar and starch in a pot and mixed. Then I added the milk.

I put the pot on low heat and stirred continuously until the cream thickened.

I took the pot off the heat and added the vanilla sugar and 1 sachet of Bourbon vanilla sugar.

I let it cool. In the meantime, I made whipped cream. In a large bowl I put whipped cream, powdered sugar, 1 sachet of vanilla sugar and whipped cream hardener. I mixed until I got a strong cream.

Over the whipped cream I added mascarpone and chilled vanilla cream and mixed very well.

We hydrated the gelatin foils in cold water and then we heated them on a steam bath. We added them over the cream and incorporated them.

I added cream over the counter, leveled and decorated the cake.

I left the cake cold until the next day to serve.
