In a bowl, mix the egg with the sugar. Add melted and cooled butter, vanilla sugar, nutmeg and milk.

Mix well and add flour mixed with baking powder and baking soda. Mix well until you get a homogeneous dough.

Put the dough in cling film and let it rest for 2 hours in the refrigerator.

Roll out the dough and cut long, thick strips.

Cut small squares with a knife. Sprinkle them with flour so they don't stick.

Heat the oil and fry them. Do not put too much, mix and brown well on all sides.

Remove them on absorbent paper and let them cool.

The croquettes are ready, you can taste them hot or cold.

It can be stored for a few weeks in a plastic box.
