Mix the egg well with the soft butter and a pinch of salt until it becomes a cream. Add water and vinegar and mix.
Add flour and knead an elastic and non-sticky dough. If it is too soft, you can add flour.
Cover and leave the dough until the apples are ready.
We clean the apples and grate them on the grater with large meshes.
Put the apples in a pan on the fire together with the sugar. Saute the apples until all the liquid is reduced. Turn off the heat and add the cinnamon. Let it cool a bit.
Divide the dough into two parts.
We spread a rectangular sheet on the floured table.
Carefully place the sheet in the tray (25 / 35cm) greased with butter. Sprinkle a little semolina over the sheet.
Then put the apples and spread them evenly in the pan.
Spread the other sheet and place it carefully over the apples. With a fork we prick the sheet from place to place.
Put in the oven, on the right heat, until it browns nicely on top.
Let the pie cool a bit.
Then take it out of the tray and dust it with sugar.
It's not a very sweet pie, and I guarantee it's very good :).
